12" Grilled Vegetable Platter (Served Cold)

I was so happy to have an easy, ready-to-serve side that still felt gourmet—the peppers were the star, sweet and smoky even when cold. Perfect for a summer BBQ where you don't want to heat up the kitchen.

The cold grilled zucchini kept a nice snap even after sitting out, and the mix of peppers balanced well at our potluck. It saved me from having to fire up a grill for a side dish, and everyone went back for seconds.

The peppers and eggplant still had that nice charred flavor even though the tray arrived cold, which made it feel fresh for our party. I put it out as a side and it was picked clean before the main course, so I’ll be ordering it again for the next get-together.
